Full recipe below.<br /><br />INGREDIENTS<br />600ml milk<br />250g cheddar grated <br />250g macaroni<br />40g plain flour<br />40g butter<br />50g Parmesan grated <br />1 Broccoli head, florets chopped into small chunks <br />1 Red pepper diced <br />1 Tin of sweetcorn <br /><br />OPTIONAL EXTRAS<br />Handful of breadcrumbs for an extra crispy top<br /><br />METHOD<br />1. Cook the macaroni per packet instructions.<br />2. Toss chopped broccoli and red pepper in oil and place onto the baking sheet. Bake for 15 minutes (200°C/400°F/gas 6).<br />3. Melt butter in a saucepan, add the flour slowly make a roux - cook off for a few minutes. Gradually whisk in the milk to get rid of any lumps, Cook for 10-15 minutes until the sauce is nice and thick. Add 3/4s of the cheese and stir until melted.<br />4. Mix together the cooked macaroni, roasted vegetables along with the sweetcorn and put in an oven proof dish.<br />5.
